Chef Will Goldfarb

Will Goldfarb is an internationally acclaimed pastry chef. Mr. Goldfarb has been in the spotlight for his dramatic interpretations for nearly 15 years. His brand of experiential cuisine seamlessly blends the finest elements of cutting edge gastronomy with traditional techniques and flavors, while retaining a sense of humor. Chef Goldfarb’s artistic presentations and iconic imagery have been celebrated around the world.

Mr. Goldfarb was recently identified in Lisa Abend’s book The Sorcerer’s Apprentices, regarding the stagiares of El Bulli, as one of the finest chefs in the world to pass through the El Bulli kitchen. Chef Goldfarb was also listed in Ferran Adria’s recent book, Food for Art, Art for Food, as one of the most important chefs in the 20t h century. This year, his desserts have featured in Sogood magazine, Emilie Baltz's Love.Food.Book, and Olivier Dupon's The New Patissiers.

Mr. Goldfarb currently resides in Bali. Prior to the reopening of Room4Dessert, he directed the research and development and pastry programs at Mejekawi and KU DE TA, Seminyak, one of Asia’s leading lifestyle destination. Here, Mr. Goldfarb directed a team of 16 to complement Chef Ben Cross' contemporary classic menu, helping to keep KU DE TA consistently ranked as one of Asia’s finest restaurants.

After a decade of traveling the world, including stints at El Bulli, Gerard Mulot, Cibreo, and Tetsuya, Chef Goldfarb returned to New York, gaining a reputation, often controversial, at Papillon, Morimoto, and Cru. The opening of his dessert bar Room4Dessert thrust Mr. Goldfarb into the spotlight. This set the scene for Bill Buford’s quintessential six page profile, which shared the cover of The New Yorker, “The Prince of Pastry.”

 

Mr. Goldfarb has featured extensively in the New York, United States, and International food media, but counts with particular pride his two features for Apicius, The Spanish Journal of High Gastronomy. He was nominated for a James Beard Award for Best Pastry Chef in America, but the loss still stings. However, it was soothed with receipt of the Pastry Art and Design “10 Best Pastry Chefs in America,” and Starchef “Rising Star” awards.

Mr. Goldfarb has been invited around the world to lecture on dessert design, including rocking the main stage at Identita Golose in Milan, as well as the American Institute of Graphic Artists in New York. Chopin Vodka awarded a $5000 honorarium as an “Unconventional Genius,” which was directed towards Smile Train, a nonprofit organization working to provide cleft palate assistance to underprivileged children.

Through Willpowder, Mr. Goldfarb distributes select natural ingredients to enhance and express the purest flavor in pastry. He also founded, with New York University’s Chemistry and Food Studies Department, The Experimental Cuisine Collective, an interdisciplinary network at the nexus of food, science, and social network. He lives in Berawa, Bali, Indonesia with his wife, Maria and daughter, Loulou.
